Hyatt Regency Maui Resort and Spa Announces 'Ūmalu Restaurant
Grand Opening


KA‘ANAPALI, Maui, Hawaii (September 25, 2008)— Hyatt Regency Maui Resort and Spa today announced the grand opening of the latest edition to its dining experiences, 'Ūmalu, a casual yet upscale full service lunch and dinner venue showcasing modern contemporary Hawaiian cuisine located poolside with views of the ocean, as well as Lana’i and Molokai islands.

The $8 million dollar project terraces 'Ūmalu into the hillside off the pool area, below the main resort tower. As 'Ūmalu in Hawaiian means “the shade under a cliff or to cast a shadow,” guests can take a reprieve from the sun for a restful and soothing dining experience. With a rich stone façade entrance, guests will be invited into a room designed with tumbled stone or open air seating with the option of a cool flagstone area or actually dining at tables set on sand for a more beachside experience.

“'Ūmalu is the resort’s modern and luxurious offering for memorable dining – be it for a casual yet elegant dinner or a refreshing break from sun drenched activities for lunch,” said General Manager Michael Jokovich. “This addition to our resort rounds out our dining options with a tropical yet progressive poolside establishment.”

Baby Penguin Born at Hyatt Regency Maui Resort and Spa

Hyatt Regency Maui Resort and Spa is proud to announce the addition of a new baby – an African Black-Footed Penguin born to parents George and Waddles residing among the wildlife at the resort. Baby “Buddha” was born on October 20th, 2007, and after being cared for by both parents for eight weeks, Buddha has lost his downy feathers and gained new blue feathers. Within a year, he will get his mature and prominent black and white coat.

The Next Generation at Swan Court; Son’z is Born

Like any baby, it takes some labor, but the outcome is worth it. From the moment the Hyatt Regency Maui Resort & Spa announced the closing of the Swan Court last July, everyone has been anticipating the announcement of a new restaurant to open in the lovely setting. The “baby” is expected before Thanksgiving, and will be named Son’z at Swan Court, says the proud papa – Aaron Placourakis.

“We are very pleased to partner with Aaron on this venture,” says Frank Lavey, General Manager of the Hyatt. “We felt the caliber of service and cuisine at his restaurants is a good fit with our image and reputation.”

“The huge, 10,000 square-foot restaurant is undergoing renovations now, with one of the focal points to be the walk-in, glass-enclosed 3,000 bottle wine cellar. It will be the largest in the state,” says Placourakis. “We’ll serve classic seafood and steaks, Maui style.” This means the freshest ingredients from the islands, prepared in the innovative, unique style Placourakis’ restaurants are famous for.

Aaron has established himself as a first-class restaurateur with Tri-Star Restaurant Group and JAS Restaurants, LLC. His fine dining collection includes Maui restaurants Sarento’s on the Beach and Nick’s Fishmarket, and Aaron’s Atop the Ala Moana and Sarento’s Top of the “I” in Honolulu. Another restaurant, Blu, will open on Front Street in Lahaina before the end of the year.
